Title: 1st jerky attempt.
Post by: Mailman on October 06, 2010, 12:25:59 PM
First off I would like to thank Nepa for his expertise advice. I used original LEM. smoked for 1hr 40 min. Cooked some for almost 6 hours. (some pieces a little thicker). Pulled em off as needed. Smoked with hickory. Had 2 batches. This batch is being smoked with maple. I didnt dry them crispy. still a little soft and chewy. Not real chewy though. I used the backstrap (very tender) from my recent deer kill. Darq. I'm trying to get some off the road so you have a clear traveling path. This jerky came out fantastic! Thanks again Nepa.
