Title: Hoop Cheese?

Got an old country store up the road here that has whole round wheels of hoop cheese displayed in a plastic container and he'll cut you off a slice or chunk depending on how much you want. I was wondering if anyone has ever tried to smoke hoop cheese. I know it sits on the counter there for weeks or months sometimes until the wheel is fully sold. He has stacks of them in the back that must be weeks old. The old timers around here seem to be in love with the "old" smelly cheese.  ;D
I really like it on crackers with a cold can of coke. Just thought about smoking some since it's so readily available to me.

I see no reason why you can't. Just cut off the wax and smoke like any hard cheddar.
