Weather is nice and cool here as of late, and I needed more smoked cheese, sooo

Two blocks of old cheddar and one marble.  I gave them 4 pucks of apple, then vac packed and in to the
fridge till christmas.  If I can wait that long :D

Nice. I just did 10lbs last night of copper sharp with apple for 2 hours then vaced it up. I couldn't wait till the temps dropped here in Pa to do more cheese.  Christmas is a long way to wait i am thinking Thanksgiving just for a sample for me  hope it last till Dec !!

Exactly where do you live? just want to make sure that cheese is safe while you are away ;)

SnC, you only HAVE to wait about 21 days.

Better do more, you will have that ate up before Christmas!
