Git 'er done! Cured!
And the adventure begins. Go get em Hal. Mmmm whisky, Good Thinkin'!!
Dr Baconstien!
I'm glued to this thread! ;D
"Dr Baconstien!" I like that! Could be very interesting.
looks like fun....
Ok.....
Here goes....
With my new (unrelated) gasser mods...
This story may or may not have another chapter ;D
Trying to get a head start on a little 11 year old girl are ya?
This will be fun to follow! I noted that you have 10.5 's recipe printed and laying with the ingredients. Now granted I have not read Chris's recipe in a while but I'm pretty sure that a fifth of Maker's Mark is not on the ingredient's list.
Did you know that it is a proven scientific fact that Maker's causes a chemical reaction that kills pink salt? :D(just kidding) Not to mention it makes the chef drunker than $hit.(not kidding)

Good for talking to the
firemen!
Oh boy... I should have measured out some of that Pink Salt, instead of giving him an entire pound.. :o :o

And if I recall good for talking to the police too! ;)
Hey what is with the "not for sale" meat, is that as in "not fit for human consumption" but Hal can eat it. :D :D :D

Hey what is with the "not for sale" meat
You aren't the only person wondering that! (heading out to freezer to check a few more packages)
THAT was a GOOEY job!
Only had 1 gallon bags and, so, had to cut one in half.
Whatta mess. In the fridge now. TICK TOCK....
"Dr Baconstien!" Man, Sonny called that right.
Bacon, Bacon!!
Where are these '2 Gallon' ziplock bags he speaks of??
D@mn you Iowa!!

I think the ZIP part of my ZipLocks are full of brown sugar and Kosher salt granules...
Crunch-zip-crunch-zip...
Don't you roll the top down before filling the bag? Geez Hal do we have to tell you everything. ;D
Walmart carries those 2 gallon bags of which you speak.
As for that "not for sale", the bellies came from a packing house. Interpret that to mean "not for REsale".
Gee whiz 10.5, didn't you tell those boys anything? :D
Is that anything like why they call me "meathead". ;D
Holy crap! I've got TWO strings on these shoes! Should I tie both of 'em?
My money now is "For Sure" on the 11 year old Girl! ;D

My money now is "For Sure" one the 11 year old Girl! ;D
Yeah.. well.. You go ahead...
But just remember... I passed kindergarten, no problemo, on my second try.
Don't they have to pass you after the second try?
I believe the probability of that 11-year old girls winning is directly proportional to the amount of MM consumed by Hal as he makes his.
I wonder what he's going to do in the morning when he wakes up and finds that the Pink Salt package is sitting on the counter and is still sealed.

I think it will be more proportional as to how much her Papa helps her which aint gonna be much! She unlike Some we know passed Kindergarten the first time around!!!

That was assumed and I doubt she needs much. From what I heard she has "them guys" figured out pretty well.
Also assumed was the kind of help Hal is going to get from STC and KN. ;) ;D
Well... The pink salt was opened... So, that's encouraging ;)

Kynola I told him this aint no High Brow Bacon this is simple stuff. I usually have Black Velvet around when conjuring up my recipes.
Bacon is drying now in the old magical mystery machine...
(looks like the Bacon Yoda's divine light is shining down on it :D )

Love it!
Go Hal - you ain't whooped yet (that comes later). ;)
Now that you have shown the "LIGHT",
I'm switching my $$$$ to you Hal!
Go Get'em! ;D

Go Get'em! ;D
Since I firmly believe that the wisdom of age along with treachery will overcome the knowledge and skill of youth every day, I would say that the
smart money would be with Hal.
But, since I tend to be challenged in both smart and money, anyone betting should probably go with Rachel.
:D ;D
There is a strong feeling in 'The Force' that bacon is near...
Well, I should have switched machines for the smoke part...
The Smokin' Tex holds moisture too well, so I didn't get the deep color I wanted.
But, I'm sure the HICKORY went deep.
It's all cooling now.
Gonna slice/vac and make some BLTs in a bit...

Looks good so far..
Trusty old Smokin' Tex needs some FrogMats!

After seeing the pic Hal posted I am thinking it will take more than Divine Intervention to keep him from getting his butt whooped by an 11yr old girl!!
Looks awesome Hal, any pictures of the BLT coming? I just got home and now starving.

She wanted to do that but I told her that Hal was getting old and it was his birthday on Saturday. So she had to be nice to him with no treacherous acts being committed
Don't judge a book by it's cover!
It still TASTED FANTASTIC...

Now the story of the ugly duckling is coming to mind!! Looks like it turned out real well for you Hal. Rachel will be starting hers Tomorrow night.
Now that's what I call a BLT Hal !!
Mighty fine indeed Hal
Funny thing is...
That was my first ever attempt (obviously) at bacon...
And I have a long list in my head of changes for next time.
BUT --- No leftovers, and I would have eaten every last morsel if I had cook up 20 lbs of it.
Ain't that weird? ;D
I see the Beginning of a BLT...
Looks good Hal!
Where's mine? ? ?
(hold the L & T, I'd just go for some B right now)
Like bacon? Like BLT's ? Before TX I lived in MI for a dozen years. About 30 miles south of where I lived right on I-75 is the tiny town of Birch Run where you will find Tony's I-75 Restaurant, an area favorite made famous by their BLT. Check out their BLT (http://www.youtube.com/watch?v=oswFTZPBZl8&feature=related), and other goodies. Still standing after that sandwich? Go for their banana split. Oh and if you have breakfast and order bacon (with eggs or about anything), you'll get a pound of the stuff.
STC - I forgot about their Chili Cheese Fires -- may be the answer to the Horseshoe.
Nice Pics Hal thanks!!. Unfortunately I am at work with no bacon and hungry. C'mon gut truck!!
I'd say you did pretty dang good for the first time around.
Congrats on the Bacon Bacon Bacon!
Nice going Hal!
Just a tip for all you BLT lovers...
Depending on where you live, it can be very hard to get good tomatoes for most of the year.
Those tomatoes in the picture are "Campari" tomatoes from Sam's Club.
They're not real big; kinda in between golf ball and tennis ball sized...
But, you can get them pretty much year-round, and they look/taste like tomatoes!
I love a GOOD BLT with Mayo!
Thanks for the tip on the tomatoes, Hal!
That's some great looking stuff you made! Hard to beat a good BLT, and I would bet that bacon you made put it over the top.
