Not shy-just busy! smoked Gouda and cheddar.  Smoked the Gouda for 1 hour and the cheddar for 1 hr and 40 min.  It did taste like an ashtray so I am assuming it had enough time- will let you know in 5 weeks.  I did put two cold packs in zip lock bags and put them on the bottom rack. I held the door ajar slightly using my special tool in one of the pictures.  An empty bottle works best, so this should be done prior to firing up the smoker!  :D  The temp never went above about 52 degrees.  Brother bear will post my photos!

Sounds like a challange  ;D. Still waiting on the pics. If you ask these guys all the time, things get pretty expensive pretty quick, lots of product and lots of modifications to the Bradley.

Welcome Sister bear, what part of the Okanogan are you from?
Just ask any questions you want and we will help you

She is in the Summerland area. She sent me some pictures to post, but they are about the size if a postage stamp, we will get that sorted out and get them posted. Looks like I may have some stiff competition  :o
