Title: Mango Salsa

1 -ripe mango fleshed and cut into 1/4 in squares.
1 - med red onion finely chopped
1 - Jalapeno pepper finely chopped
1/4 cup -chopped fresh basil (more if needed)
a little salt
juice from 1 lime
about 1 teaspoon sugar (optional)

Mix all and let set at room temp for at least 30 min and up to 2 hours.

This is good on any seafood or chicken.

Speaking on this same vain....Share some your salsa recipes here, paleeeeeze.  Man I am looking for a good one.  But in the mean time I am going to try this.

variation on the mango salsa. i add a little bit of orange-mango juice concentrate and i use habanero instead of jalapeno.
we always use this salsa on our halibut taco's.

things go better with...smoke!
