Title: Whitefish recipe needed!!

I've been catching Whitefish the last couple weeks and am looking for some good smoking recipes. We have a local smokehouse that does it, but would like to do my own, anyone with expierence with whitefish?? I'm catching more than I know what to do with and if I can get a good smoking recipe, perhaps I can make some smoked whitefish spread too! or whitefish sausage....

I haven't tried the method that was suggested yet, but it sounds good.

A few weeks ago I repeated the brine/smoke method and they came out fine. There were a huge number of pin bones I had to remove though -- at least 20 per fillet, and it was a commercial sourced fish. Most of the smoked product I've seen in the stores is steak cut, so there must be plenty of bones....
