Well, this was my third smoke after having my Bradley now for a week and a half. I'm pretty much looking for excuses to smoke anything. I took 2lbs of boneless skinless breasts and sliced them into tenders. I rubbed them with Montreal seasoning and let them sit in EVOO. I then smoked them for an hour using hickory and left them in the Bradley a total of 1.5 hours until the IT reached 165F. The taste was great and the meat was very moist! The outer layer of the tenders became a little hard but other than that I had no complaints.
