I finally got around to smoking an animal protein. I went with the Asian rib recipe on the bradley site and it was awesome.

I gotta say, this site and the people on this board are the most helpful of any board I've ever been on. Thanks to everyone who helped me get over a couple initial hurdles. I'm a total convert, i think this is my favorite cooking device and it knocked my cast iron skillet from the #1 spot which is a huge deal for me.

I would have taken pictures but by the time I remembered they were all gone

Sounds like a winner adrian ... You'll soon learn that everyone will groan and bad mouth you cause you'll be having them wait until you take all the necessary photos and money shots for us food porn addicts  ;D ;D

Yeah, yeah. Next time around I'll make sure to remember. Maybe I won't be 4 beers deep by the time I'm taking the meat out next time.... well actually that's unlikely.

I'm going to go for something more challenging next weekend. I'm debating whole chicken vs. brisket. Any comments on that debate?

Whole chickens are an easy one day cook. I generally do two at a time, spatchcocked (butterflied).
Brisket is a long term commitment but well worth the effort. Take a look at Pachanga's recipe,

It's an education in itself. Oh yeah...pics. And if they are out of focus, we at least know you tried ;D
