While at the store on Saturday we ran into an old friend that knew I loved to cook and bake. She told me about this recipe for Ice Cream Bread, I thought she lost her mind but this stuff really is good. Believe it or not it only has 2 ingredients ice cream and self raising flour.Here is the start of ice cream bread.

Next mix together after the ice cream is smooth like soft serve

Spoon out in your tins or pan

Bake 30 to 35 min's at 350 and here is the results

Sorry forgot to say. 1 pint ice cream to 1 1/2 cup self rising flour. Mix well after the ice cream has thawed somewhat sorta like soft serve but not melted

Tom...I can't seem to see the pecans........ummm....could you send me about 8 or 9 to perform closer intense scientific inspections. I promise to also perform the multiple favored coffee taste test to determine the optimal flavored coffee to ice cream bread muffin combination. I realize that this will involve a vast amount of blood sweat and tears but I'll keep the volume turned down in the background while testing is in progress. My lab coat, safety glasses and microfiber shoe covers are at the ready!!!

After eating it and thinking about the recipe I would add some sugar to it so it would be more like a coffee cake/bread.
It's very similar to banana nut bread but not as sweet
Any suggestions on the sugar amount?

Not really, but I would guess 1/4 cup to try first. I don't want it real sweet just a little.
I thought with the ice cream it would be very sweet but it wasn't. It may also depend on the ice cream you use.

I made some ice cream bread to go along with a pot roast for dinner last night. The ice cream was Blue Bell natural vanilla bean and the only flour we only had was bread flour not self rising, but what the heck I wanted to see what would happen.

The bread has a good sweet taste but is more on the heavy (dense) side! I'm thinking that may because of not having self rising flour. It was worth doing! ;D

I made a pan of ice cream bread this morning. I used self-rising flour and Ben & Jerry's Brownie Batter (Brownie Batter Ice Cream with a Rich Brownie Batter Swirl). I sifted the flour. I did not add sugar.....yes it needed it!!! After I mixed it, I gave it about 20 seconds on high to incorporate air into it. Baked it at 350 for 35 minutes. The toothpick came out with batter on it at 30 minutes. I let it cool for about 45 minutes and then cut me a square. It was cakey rather then thick like a brownie. More light chocolate taste rather then a devils food taste. I would make it again WITH sugar added!!!

The last bread I made (Rocky Road) I used 1/4 cup sugar, but Kimmie said I need to try 1/3 cup next go-around
The wife decided to make a batch of homemade bread today, she spent hours on hers. I made some ice cream bread in about 40 minutes :)

Thought I'd give this a try but didn't have enough ice cream,so I used 1/2 ice cream and 1/2 frozen yogurt.
Also added 1/3 cup of sugar.
Baked,removed from oven,let cool and tried a piece . GOOD STUFF !
Definitely do again !

I had that problem as well, now the camera stays near my grills and one in the kitchen so I try no to miss a shot (it does happen though) As for the mice, you will have to take care of your own mice, 'cause mine ain't no problem no more ;)
This recipe sounds kind of neat. I love making bread but am always game to try something new! I am off to the store to buy some self-raising flour.
I wonder if it would work with frozen yogurt as well?

All I can say is try it and post the results. ??? I bet it works but you may need to add sugar (I'd say 1/3 cup)
