Title: 2 chicken breasts.
Post by: thirtydaZe on January 11, 2011, 10:04:12 AM
I have to figure out what to do with 2 chicken breasts, keep in mind they are 2 uncooked packaged breasts.  Keep in mind also, I hate these things!

Used a chicken breast in my stir fry last night, which when crockpotted or chopped up and included in tacos, or something i can eat them fine.

Long story short, i've got to come up with something creative to do with these 2 breasts.

marinate, smoke and slice and use in fajitas.  Or smoke and use to make chicken salad.  Put the chicken salad on an English Muffin, top with lots of grated cheddar and heat until melted.

Pound them out flat about 1/4 inch, then spread a thin layer of garlic and onion cream cheese over them. Roll them up into pinwheels wrap with bacon, hit them with some of your favorite rub and smoke/cook at 225º until the bacon is starting to crisp and the IT is 158-160º. Foil tent then for ten minutes. Slice and eat.

Something like this. http://forum.bradleysmoker.com/index.php?topic=8623.0  I knew I had done this before
