Title: tried my cheese

Well made cheese back in the second week of December, finally opened the cheese up. The medium cheddar was fantastic my wife really liked it. The Gouda on the other hand still has a little taste of the ashtray in it so back to the vacuum sealer it went to age a little longer.

Just out of curiosity what smoke did you use on the gouda?
