Title: First butt a huge success
Post by: gbritten_nh on March 27, 2011, 10:59:33 AM
OK, I waited to talk about this until I had pics, though I am sure you guys want more pics!

I marinated the butt overnight in Jan's rub, then removed it to warm up 3 hour before smoking, and added some additional rub.  I started smoking the butt at 6 PM yesterday, for 4 hours in the Bradley trying to hold 210, with Hickory (sorry, no pics in the smoker yet, of anything I have made).  Then, transferred to oven for about 12 hours, 9 @ 210, 3 @ 225 then FTC for 2 hours, then sandwiches!

Here is it after the overnight marination:

Here it is after smoking, starting the low and slow overnight cook in the oven:

and here after pulling:

We had it for lunch so my wife could enjoy it immediately, as she works nights and will not be here for dinner.

190 checked with the Maverick probe in a couple of places.  I did not check IT after FTC.  My manual quick-reading thermo did not quite show 190, but I trust the Maverick more.
