Title: Thinking about kielbasa

Hi all,

I am thinking about kielbasa this weekend.  One thing I like about it is the snap of biting into the skin.  Is this collagen casings or another type?  I wouldn't think that collagen can stand up to boiling.

I think you will find that natural hog casings will give you the snap you are looking for.

Since I don't have the hog but do have the fiberous it looks like it will be summer sausage this weekend.
