Title: Pecan alternative?
Post by: CaptTrips on April 20, 2011, 12:19:46 PM
New smoker here, and tonight I'm making Habanero Smoker's Bacon Wrapped Pork Tenderloin Medallions. I do not have Pecan and would like to know of an appropriate alternative. I have the variety pack, Mesquite, Hickory and Crown Royal. I thought perhaps Maple, not sure.

Any advice is appreciated!

You could go with Hickory, and just shave a little of the smoking time off.

Or mix Hickory & Maple.

Yep Id go with the Hickory.

I do most of my smokes with Pecan, Hickory is a slightly more robust smoke but not that much.

Either suggestion by STC will be a good substitute. Also as OU812 states the difference may not be that strong, especially with a 40 minute smoke that is used in that recipe.

Thanks for the info fellas. And thanks for the recipe Habanero. I was showing off the ICB pics at work today and needless to say there was a lot of:
