Post by: locomotivejoe on April 24, 2011, 05:40:45 PM
I have 4 fresh wild turkey breast only! does anyone have a good brine/cure recipe and a suggested smoke flavor and time for doing just a breast-not the whole turkey? Or can you direct me to where I can find one on the site?

A lot depends on the salinity of the brine (salt concentration). Generally for breast you should only brine 1 -3 hours.

The following link contains some brine recipes.
