Title: Killer Potato/Past Salad

Here's a recipe I have made several times. I've made some simple modifications to the original recipe from http://www.alohafriendsluau.com/recipes.html (http://www.alohafriendsluau.com/recipes.html)

POTATO-MAC SALAD
4 large red and/or yellow potatoes cut into cubes (I usually go a little heavier on the potato count)
1-1/2 cups shell or elbow macaroni-dry
2-3 pickles chopped ( I usually just use Dill Relish)
2-3 green onion chopped
1 cup frozen peas
2 celery stalks chopped
1-2 carrots chopped (I like to buy the pre-shredded carrots)

Dressing:
1-1/4 to 2 cups mayonnaise
1/2 cup Zesty Italian dressing
2 T or less pickle juice


Boil cubed potatoes until tender then drain and rinse with cold water. Set aside to allow to fully cool. Cook the macaroni according to the directions on the macaroni package. Then rinse with cold water and set aside to allow to fully cool.
While the macaroni is cooking mix the dressing in a small bowl and set aside.
Once the cooked macaroni and potatoes are cool lightly toss with the remaining ingredients. Once tossed mix in dressing.  Salt and Pepper to taste.

Serves 8-10 people.

One other modification I forgot to change, is that I boil the potatoes whole and when they are cooled off, then I cut them up. I don't know if it makes a difference or not.
