Title: First brisket on Bradley
Post by: SiFumar on June 08, 2011, 10:10:54 PM
One thing I hadn't tried on the Bradley yet was a brisket.  Bought a small 6.6lb flat yesterday.  Coated with CYM mixed with beer and a splash of cider vinegar.  Seasoned with pepper, garlic powder and lightly with salt.  I tend not to over salt when letting it sit overnight so water isn't drawn out.  I also slice a bit thru the fat so seasonings work thru to the meat. Wrapped for overnight.

Out this evening for it's warm up

Decided to add some chicken thighs with Jan's rub to snack on tonight.

Rolling 4hrs of hickory.  After 2hrs the chicken pulled to finish on grill.

Will post results of brisket tomorrow.

Of all the things we do in the smoker, I think brisket is my favorite...looks like you are off to a great tasting brisket...good luck..

Foil Towel Microwave. Kind of like FTC (foil towel cooler) With FTC when you take the meat out of the smoker you wrap in foil, then in a towel and put in a cooler (no ice) for a cople of hours. if you don't have a cooler yo can pt in in a microwave 9don't turn it on). If you are using a microwave you can usually skip the towel.
