Leave about 2" of the liquid in the roaster.

Add the pulled poke carnitas back to the liquid and cook uncovered for 45 mins. Do any seasoning adjustments here.

PR Coquito looks quite like a Pancho Creama I had years ago...are ya sharing the recipe? or is it a family secret?  Killer carnitas too!
