Title: Sunday's Dinner- Long beef short ribs

A while back I went to Publix to pick up some beef short ribs. They didn't have any out so I asked the butcher and he said he would cut some. Normally they are cut into a length of about 3 - 4 inches. As he was cutting them I asked him to only cut them width wise and leave the length so they are about 6 -7 inches long. Slow smoked they ended up tasting great.
So today I went there to get something to smoke tomorrow and picked up these babies:

Put some sopping sauce and various rubs on them

Wrapped them up and into the fridge to rest

There are a number of sausage recipes that I want to try that include lean beef and it calls for adding some beef fat (which I don't make enough briskets to get enough to cover what I want). So while I was talking to the butcher I asked if they had any. I figured I would have to pay a little, but he wrapped up 2 lbs gave it for free and said I could have as much as I wanted anytime.
Got it home, rewrapped it into 1 lb bags and froze.
All in all, a good day. More pics to come tomorrow when I get to eat 'em
