This thing is awesome. So far I have done salmon, shoulders, steaks, chicken, and brats. I have yet to not fill the thing. Just finished 28lbs of shoulder for a party. Used hickory and it took about 30hrs to hit the 195 mark and it just fell apart. The bark was a little too heavy so I have some figuring to do for next time. I love the forum, lots of info and it seems like there are some pros who are willing to share their secrets
I like that strategy of if you are gonna smoke, Fill up the cabinet.
