Title: smoked Pecans
Post by: cobra6223 on September 15, 2011, 03:09:26 PM
I see post for almonds but don't seem to find any on Pecans, a co-worker wants me to smoke 2# of them for him, he thinks they need to be sweeter, any ideas and suggestions are greatly appreciated. My ieda has been to some how coat them with honey and then smoke, with apple or hickory, I was thinking the apple might add some sweetness? Thanks again

Tim, I did this the other day on some pistachios and they are fantastic.

For two cups of nuts I used:

4 Tbs of butter
2 Tbs of John Henry Pecan Rub
2 Tbs of Honey

I heated all the ingredients up and let it cool Little

Poured in a bowl and stirred in the nuts.

Put the nuts on a rack and let them drain off excess liquid.

set smoker for 225* and gave it 2 hrs of pecan smoke.

Right before they went in the smoker, i dusted the pistachios

with sea salt.

Sweet and salty works for me.
