Saw the recent posts on pastrami and remembered that I had a corned beef brisket in the freezer. So I defrosted it, added some rub, put back in the fridge for a while.

All rubbed and being wrapped up:

all done and ready to wrap and put in the fridge for the night. Took a small quality control sample.

very good and it usually gets better overnight. Tomorrow I slice it thin and vac seal.
