Well mixed up a nother 10.5 lbs of Nepa's trail bolonga tonight. Setting in fridge letting flavors merge. Substituted venison. Added a 1 lb. Of pork fat. Was great before. Can't wait to try with venison. Great recipe Nepa's thanks for sharing! Will be smoking again tomorrow! Wow what a job. LOL
