Title: Blackened Pork Tenderloin

I had 2.5 lbs of Pork Tenderloin to do something with and couldn't find a smoked recipe that I liked, so I went with this Blackened recipe. I seasoned it with a Cajun rub and tossed it in a skillet of butter to blacken and finished on the grille. To top that off, I went with some Beer & Vodka Battered Onion Rings. It doesn't get much better than that, IMHO, and that's not the vodka talkin'.
