Title: quick question from a newbie :)
Post by: Acitrix on November 24, 2011, 02:01:05 AM
sorry i tried searching and found A LOT of answers to my questions but couldn't find an answer to this one >_<

I brined some Salmon for thanksgiving and brined a little too much so I'm gonna end up having to do 2 smokes. Could i smoke the second batch right after the first one finishes or do i have to clean all the racks, trays, and the face of the smoker first?

Thanks in advance  ;D

There would be no safety issues if you used them right away, but it may depend on the condition of the racks after the first smoke. If your brine contained a lot of sugar, and there is build up on the racks; a second smoke without cleaning may add a burnt taste or you may have problems getting the salmon off the racks.

One thing I would definitely do, is use a 2" metal putting knife and scrape the drip pan ("V" pan) as clean as you can get it.

And spray more Pam on the racks.
