Newbie here with question... I bought used digital smoker, cooked two pork butts as a first try and could not get temp to sit at 250 as I wanted.  If I set temp to 300 it would go to 300, if i sent temp to 250 it would go to 165-190 and never go higher even after 1 hour??  It would bounce between 165 & 190??  I have tried 200, 225 and same results......Ideas???  3 cooks so far and all temp issues the same??

The temp readings on the smokers are not the best. If you have a digital portable see what your getting for a temp and I would go by that
