Title: Scallop help
Post by: bigredsmoker on December 24, 2011, 09:50:18 AM
I want to do some scallops on the Bradley for appetizers. I have a pound of Diver scallops. I did a search and didn't come up with anything that appealed to me. Anyone have any suggestions? These will be taken to my brothers house tonight so may not be able to keep real warm. Any feedback would be greatly appreciated. Merry Christmas everyone!

I take some big sea scallops and wrap them in some thinly sliced bacon (afterall, everything goes with bacon).  It seems that on a higher heat, the bacon and the scallops are done about the same time.  As far as pre-cooking, I'd probably smoke them ahead of time, and finish them off under the broiler when you get to your brother's house.  Good luck.  They sound like another good idea.
