Post by: Karaokegod01 on December 28, 2011, 06:59:20 PM
Gonna smoke some Tilipia tomorrow and need some Help. I have never smoked Tilapia before and do not know anything about it. Should I use a rub and if so what kind or any suggestions (Any Spices or rubs or anything I should put on the Tilapia), What wood should I use, What temp. should it be cooked at and how long should I smoke it? I have 6 hand size pieces

It's tilapia.  Tilapia is not food (right up there with tofu and ground turkey).  Dump it and buy some real fish.

With tilapia I would find a recipe that uses the oven or grill, prepare the fish and smoke at the highest temperature you can get the smoker (if you have a newer OBS, make sure you don't take it over 250?F or you may trip the temperature sensor). Smoke/cook it until an internal temperature of 140?F or until the fish flakes. I would use Alder, or maybe maple or apple. Some members like special blend.

Even just lemon, butter and garlic is good.
