Yea....I've been slacking a little.  :o

I used NePaS recipe and it came out real well. I'll let the pics tell the rest of the story.

The players with 5lbs of GB..

All mixed and rested for 24 hours.

Stuffed in 19mm and 21 mm collagen casings.

10 hours later and pulled with an IT of 151 degrees.

After resting all night in the frig.

I used an 80/20 burger mix and it was good. I might try a 73/27 mix next time to see how it comes out.
