Title: Anybody ever smoked Arctic Char?
Post by: ragweed on January 12, 2012, 12:22:16 PM
I have a few Char filets left from our trip to Victoria Island, Nunavut. (Frozen)  Any smoking/brining ideas?  I am planning to use Kummock's recipe unless someone has had a bad experience with it on Char.

Thanks...Joe

I've smoked some char, but not a lot due to the price here. I used Kummock's brine and it turned out great. Go for it!

My brother used to cold smoke a lot of it --it made excellent scotch smoked salmon. It would make great hot smoked too--no reason why not.
