Some time ago I purchased "The Smoked-Foods Cookbook"; by Lue & Ed Park. I would not recommend the book, but their "Brandied Moose Roast" (http://books.google.com/books?id=rDyJUMyvgIkC&pg=PA78&lpg=PA78&dq=brandied+moose+roast&source=bl&ots=Op-CTsF7kP&sig=fBHGrhB3XBsZnc-m_rEV-xfTkvU&hl=en&sa=X&ei=R7ErT6fKCaLe2AWtjI34Dg&ved=0CCoQ6AEwAQ#v=onepage&q=brandied%20moose%20roast&f=false) recipe does look good.
