Title: Salmon from heaven

First time smoking salmon and it turned out wonderful.
Took about 8 hours total, 2 hours of alder to kick it off.
used the step method from 120 through 140 and ended at 175. Pulled at IT of 140.

Nice looking fish. I never judge the fish being done by IT, look for colour and the texture. After 50 or 60 bls. you get to know what your looking for.  ;)
