Title: Quick Pork Butt Question
Post by: phoenix316 on February 28, 2012, 10:56:13 AM
I got an 8 pound pork butt (bone in).

I have it brined and rubbed and in the smoker at 220 with 5 hours of hickory/special pucks.

It is going to get cold tonight and I don't think the smoker is going to keep the temp up all night.

I was wondering it I could transfer it to the over set at 220  overnight, till it hit temp.

I am going to put it over a water bath in the over, just like in the smoker.

Is there anything else I should know when transferring it to the oven?

That will work just fine, no need for a water bath unless you just care to do it that way.

Not so much that you have to pit pics up. It's just that it's nice to look at pics when you are describing something. Even if we've seen 10,000 butts :) , another pic of one doesn't hurt.
Imagine a magazine with words only. ;)

Oh, I know I don't have to put up pictures.

I wanted to, I didn't take any pictures of my first smoke, and I regret it.

I am about 1 hour from pulling the pork butt from the smoker.

I just have a couple more quick questions:

Should I wrap the butt in foil before putting it in the oven?

Should I so anything else other than just put it on a wire rack on a sheet pan in the oven?

I
It is going to get cold tonight and I don't think the smoker is going to keep the temp up all night.

just some fyi for , i did my first last butt last week,it was 7 lbs, put it in at midnight
with outside temp of -10*C , no wind, and temp did fine, when i checked on it at 4am
after it was done smoking temp was actually 230*F inside smoker using my maverick,
had my temp set at 280 on the dbs, so i turned down to 260*F, when i checked again at 8
it was sitting comfortably at 215*F, no mods except the blankie,

so you might be fine depending on temp and wind

You can foil it when you put it in or not, just put a pan under it to catch any drippings.
when its done then you can foil wrap, warp in a towel , and place in a cooler from 1 to 4 hrs to rest before you pull.
