Title: Kippered beef jerky?
Post by: Louie_Sausage on March 12, 2012, 07:13:22 AM
Don't suppose anyone here has a recipe for Kippered Beef Jerky? I love the stuff store bought and would like to try and make it myself.

Its more of a wet/moist beef jerky, Google didn't really help with info. Can anyone tell me what makes it "Kippered"... I'm thinking maybe vinegar and a different drying process.

Thanks.

Found this online.
Link tells how to do it.
Often, beef jerky and kippered beef are considered to be one and the same. Actually, jerky is usually dried in smaller strips and not smoked. The word "kippered" refers to the way the food is preserved. Most kippered beef is smoked and not as dried out as jerky. The slices can be rather thick and slightly more moist than jerky.
