....four racks of ribs in the smoker today.....50/50 apple/hickory.....I like to use a modified 3-2-1 system....actually a 3-3 system....rubbed with McCormick Grill Mate (brown sugar bourbon), just smoke for 3 hours, and tent them in foil with pomegranate juice for another 3.....serve sauce on the side.....the advantage of this is not only sauce on the side, but no sauce in the smoker.....making it much easier to clean!
