Title: Keeping pork ribs warm

Gonna try my hand at making pork spareibs tomorow. Gonna use TenPoint5's  3-2-1 method from the recipe site. Since I am having guests over and the ribs might be done early what is the best way to keep them warm for a few hours? FTC?

If they finish early, I'd wrap them and put them back in your Bradley on a low (120°-ish) setting.

I hold them using the Bradley at a temperature of 140° - 150°F.

I FTC'd them in a cooler with a couple of foil-wrapped bricks that spent some time in a 500F oven.

I use the FTC method for up to 3 hours.

If that 3-2-1 method doesn't result in ribs as tender as you wanted try reversing some of the numbers next time.  I smoked some spare ribs the other week using a 2-3-1 method that someone else on here suggested and they turned out fall-off-the-bone tender.   ;)
