Title: Breakfast Pizza anybody?

Had to feed my sourdough starter this weekend so this morn I made up a breakfast pizza.

Started of with a couple home grown brats.

Then removed the casings and chopped n browned but not fully cooked, dont it dryin up wile in the oven.

Then dropped in 1/4 cup butter to soak up all the goodies left in the pan.

To that added 1/4 cup flour and stirred till golden brown.

To that I added 8 home grown eggs.

Cooked the eggs till almost done, more like a paste, dont want them to over cook.

Punched down the dough.

Oiled a sheet pan with some roasted garlic EVOO.

Then started stretching the dough, when it starts fightin back lay a damp towel over it and let rest.

15 min later stretched a little more.

Another 15 min and were almost ready for the good stuff.

Time for the eggs.

The sausage.

About 1 1/2 cup Pace Hot Picante Sauce, I always put picante sauce on scrambled eggs.

And topped off with a couple cups of  Mexican Blend cheese (montery jack, cheddar,queso quesadilla and asadero cheeses)

In a 400 F oven for about 40 min or till golden brown and bubbly.

Let cool about 20 min then slice.

Mammas slice, she thought it was a little to spicy but I thought it needed more.

Next time I'm gonna add one more sausage, other wise it didnt suck.

That looks delicious.  I bake sourdough every couple of weeks.  Is that just a standard recipe or do you make any changes for the pizza dough?

Its a way of using up the cup of starter you would normally throw away.

1 cup sourdough starter, unfed (straight from the fridge)
1/2 cup warm water
2 1/2 cups AP flour
1 tea salt
1/2 tea instant yeast

I knead in my KA mixer with the dough hook for 7 min then place in an oiled dish till almost doubled

Curt Momma said that you should start your breakfast pizza with some cheese whiz on the bottom under the eggs. That's how she makes them at work minus the picante sauce

They still make cheese whiz?

I havent bought that stuff in like,,,,,,,,,,,,,,,,,25 years.  ::)
