I'll bet you can do it. Cold smoked on oak for an hour? Hmmm......

Infuse with bacon drippings THEN cold smoke with oak, chill skim the fat and sip some heaven.

Ok so im cooking that turkey today, and i put the temp probe in the breast. Now a wild turkey doesnt have a lot of meat as a regular turkey does on it. Its been on smoke for 3 hours and the temp on the breast is already 131. Is that normal, does it hit a temp sticking point or will this be done in about 2 more hours???
