Title: corn beef
Post by: norskmon on April 27, 2012, 01:30:38 PM
I plan on cooking this small 3lb corn beef in my Bradley instead of in the pressure cooker as I normally do. I was wondering if I could just rub the seasoning packet that came with it. Also I am concerned about how long and what temperature to cook it at.

If you smoke a corned beef,  you pretty much have pastrami.  You might want to read this: http://www.susanminor.org/forums/showthread.php?157-Beef-Pastrami

I've used the spices in his recipe to coat before smoking.  Skip to the Dry Rub section. (but still read all for great information!) It does turn into some good pastrami.
