Got my bradley original 4 rack as a gift from my dad last week and quickly broke it in with some beef jerky (needs some work) and some ribs. I have been wanting to learn how to smoke instead of grill for a long time. There is absolutely no other way to prepare ribs than in a smoker! My rub needs some tweaking to suit our tastes but the smoke flavor was amazing and Sparky's 3-2-1 foil trick was simply INCREDIBLE.

Looks like you done good. Make small changes (one ingredient at a time) to your rub at a time so you really know what you changed and if you like what you did or not. Then practice, practice, practice. The fun part is you get to eat your practice runs.

Those look good. Haven't tried the beef ribs myself. More of a poke rib man. Maybe I'll try some next time.

The basics are: 3 hrs of smoke, then take out and drizzle honey on the ribs, sprinkle with brown sugar, put a tablespoon of butter and double wrap in foil. Put in for 2 hours. Remove and unfoil. save the juice. Pour juice over ribs and put in for 1 hr or until done

It is a widely known method for cooking ribs. If you do a Google search for "3-2-1 ribs" it is all over the Internet. It talks about it on the Amazing Ribs website (http://www.amazingribs.com/tips_and_technique/texas_crutch.html) and the Texas Crutch for the second stage.
