Title: Hominy salad/salsa

Awhile back I saw this being made on DDD at a Indian restaurant (feather not dot).  It looked intriguing so I wrote the ingredients down.  This is what I came up with.

2 small cans white hominy, drained and rinsed
1/2 c red onion diced
2 garlic cloves minced
1/2 large jalapeno minced finely
2 T finely chopped cilantro
1 tsp cumin
1 tsp chili powder
2 tsp sugar
1/4c lemon juice
1 T olive oil
1 T red wine vinegar
Salt and Pepper to taste

Mix all together.

The cook had added dried cranberries, I didn't have so left out.  Of course all ingredients are subject to your own taste. Use Serrano peppers, lime juice, white vinegar etc.  Turned out very tasty.

That warrants a run to the Grocery Store for some Hominy! I was just sitting here wondering what to make to go with some steaks for dinner tonight and that fits the bill!
