Title: Smoked Almonds

I started with 4 cups of raw almonds, which I cold smoked with hickory for five hours.  Yes, I said for five hours.  Almonds do not have a pourous skin, so it takes longer for them to take on smoke.

Then I let them rest in a jar for a week.
One week later I mixed the following ingredients:
3 oz honey
1/4 C brown sugar
1/4 C melted butter
1/2 t salt
1/2 to 3/4 t cayenne, more or less to your liking
1 t cinnamon
1/4 C real maple syrup
1/2 C Jack Daniels  yep, JD!

Mix all the ingredients - except the almonds. Use a lot of  muscle when mixing this to make sure that it becomes a soupy mixture.  Then add in the almonds.  Continue mixing and stirring until all almonds are fully coated.

Refrigerate for 5-6 hours.
I used two Silpats and two cookie sheets.  After putting the Silpats on the cookie sheets, I spread the almonds out evenly.  I put them in the oven at 230 degrees for three hours.  I turned them once during the process.  When the nuts begin to get 'black patches' on them, they are done.

These are crazy good!  They are a little sticky, but I discovered that by putting them in the 'fridge, it helps - they almost have a candy-like coating on them.

I've been using a recipe from member - "stickbowcrafter",and I find it easy,fast and above all,awesome.

Just made this with smoked pecans and makers mark bourbon.
In the frig for about 5 hours,,,or until I can't stand it any longer.
Tasted a few in the mixture and they were AWSOME !!!!

When I seen the JD in the picture I figured it was for the cook. ;)
