Title: Apple Mandarin Orange Honey Cinnamon Pork Loin
Post by: SmokinSignals on February 13, 2013, 10:36:22 PM
Purchased a nice pork loin at the butcher the other day and decided to give my solid flavor injector a try.

First, injected the loin with a apple juice, cinnamon, and brown sugar mixture.

Then injected the loin with mandarin oranges and apple pieces with the solid flavor injector

Here you can see the oranges inside the loin.

After smoking with apple wood to an IT temp of 140 degrees, we pulled the loin out of the smoker and coated with honey and cinnamon while the loin cooled for 30 minutes.  Then we placed the loin in the oven at 300 degrees for 30 minutes to finish off.
