Title: Corn & Shrimp Soup

1/2 stick butter
2 tablespoons flour
1 onion, chopped
1 can Rotel tomatoes (use liquid)
1/2 can tomato sauce
2 cups water
1 pound peeled shrimp
1/2 cup green onions, diced
1 tablespoon parsley
8 ears of corn, cut off kernels and milk the cobb, or
1 can shoepeg (white) corn (do not drain)
2 cans golden corn (do not drain)
2 cans creamed corn

You must make a roux for this soup. If you have never made a roux be prepared, you can not leave the stove. You must constantly wisk so that you don't scorch or burn it.
Melt the butter over medium heat, add the flour and stir constantly. This will take from 10 to 15 minutes, once it begins to bubble the magic will happen. The roux will start to brown, for this soup you want the roux to be a little lighter than a paper bag.

Now add the chopped onion and continue to stir, if to dry go ahead and pour in the Rotel. You just want to saute the onions.

If you made the roux in a skillet transfer it to a soup pot, add all other ingredients except shrimp.
Cook at a simmer for an hour then add the shrimp and cook just till they turn pink. About 10 minutes.

ENJOY, BUT DON'T SCORCH THE ROUX

You can also use oysters with their liquor in place of the shrimp or add both.

Not at the present time. Will be making a pot tomorrow. Will post pics then.

Love all the ingredients.

Have you ever tried adding Okra to the mix?

Will be watching for the pics. I like it.

Use the backside of a knife and scrape the cob.
