Title: Jerky Preparation question please!
Post by: paulsnapp on July 11, 2013, 03:45:50 AM
I purchase fresh eye of round, cut up into my jerky strips, season with High Mountain seasoning and cure, and then vacuum seal in a plastic seal bag.  I then place in the fridge for 24 hours before taking it out to smoke it in my Bradley.  This is what I have done but now have to travel for business so I could not smoke it.  I took it from the fridge after 36 hours and put it in the freezer.  My question is - is it safe to freeze seasoned jerky meat for a few weeks and then take it out, thaw it out and smoke it in my Bradley?

You should be good to go.  If it were me I would not be afraid to freeze it, smoke it and eat it.
