...my take on poutine...

BBQ'd pulled pork tenderloin with Yukon Gold potatoes,beef stock reduction and smoked caciocavallo cheese. 8)

BarbeQuebec, I know this is an older post but I am way far behind in reading these posts.  I had poutine once.  A former French Canadian hockey player for our team opened a small restaurant with his father.
It was YUMMY!  Sadly, he closed the restaurant once he quit the team and returned to Canada.
Seeing your version of it makes me hungry for it again.
