Planning on smoking 10 1# sticks of venison sausage this week end any tips and advice. 1st time using dual probe pid

I will start mine off around 120-130 ish to dry the casings with no smoke for a hour, after that I give them 3-5 hours of smoke depending on the sausage and bump it up ten degrees every two hours till I reach 160-165 degrees and a internal temp of 150-152. Careful when you start getting close, to much past that and they will be dry like jerky. Yes I been there done it  ;)

worked out fairly well is there and easy way to change or program the pid so you smoke on step 2 after the dry out step and when hanging sausauge how often do you rotate front to back as the back ones got to temp a lot faster than the ones in front  thanks again for all the info

The default setting is to smoke on the 1st cycle. You can program it to smoke on up to any 2 cycles or not at all.
