Newbie question:  If you set the temp in C3 to 140, insert IT probe into meat does it read cabinet temp or meat temp?
Will it shut down at 140 meat temp if all other "C" settings are set to 0?

I'm just learning but if you set the C3 for 140 that will get the cabinet to 140 and hold it for the length of time you input. It will read the IT on the digital read out but the smoker won't turn off by IT. It will shut off when your parameter for time "times out". If you want it to end on food temp you need to input that value into the "E" parameter and choose "f" for food temp.

Sorry if I just confused you more. There are people that probably can explain it better.
