Title: DIFFERENT CHEESE

Was given a wheel of Crotonese cheese. Was thinking of trying to cold smoke some. Has anyone ever heard of this type? Says it is a hard Italian cheese.

I haven't heard of it, but since you would want to cut it into wedges to get more smoke coverage you could smoke one piece up and see how it turns out before you smoke the whole thing.

Looks like it is a relative of Pecorino or Parmesan, for grating.
